Cranberry Lemon Lime Spritzer


Water.  It’s pretty much all that we drink in my home.  Aside from the post playing-in-the-snow cup of cocoa and the “I have a sore throat” honey and tea, water, and sometimes seltzer are the beverages of choice for us.

Knowing that we drink so much water, I occasionally like to put together a quick and easy drink for special days like picnics, birthdays, or holidays.  A little something different in our drinking glasses is a real treat!

To finish out my trio of recipes in the Cape Cod Select Cranberries Blogger Challenge, I’ve put together a simple drink that is perfect for any gathering.   I begin by making a simple cranberry syrup, then add fresh lemon juice and lemon lime seltzer to the mix.  That’s it.  Don’t let the simplicity fool you, this is a delicious beverage.  Great quality ingredients make for great recipes.  Quality simply matters, that’s why I choose Cape Cod Select Frozen Cranberries.

Cranberry Lemon Lime Spritzer

1 cup water
1 cup granulated sugar
2 cups Cape Cod Select Premium Frozen Cranberries
1 cup fresh lemon juice (about 3 large lemons)
4 & 1/2 cups lemon lime seltzer

Place the water and sugar into a saucepan.  Warm over medium heat, stirring frequently until all of the sugar is dissolved.

Add in the Cape Cod Select Premium Frozen Cranberries.  Stir.  Bring to a boil.  Reduce heat and simmer for 10 minutes.  During the cooking process use a wooden spoon to break apart the cranberries.

Place the cranberry mixture into a blender fitted with a top vent.   Add in the freshly squeezed lemon juice.  Mix together for 1 minute or until all of the cranberries have been broken down.

Lay a double layer of cheesecloth into a colander.  Place the colander over a pot.  Slowly pour the cranberry lemon mixture through the cheesecloth to collect any solids.  You may also use a fine mesh colander or even a fine mesh hand held sifter as well.

Cool the mixture at room temperature for 30 minutes before refrigerating to chill completely.

Immediately before serving add the lemon lime seltzer to the cranberry lemon syrup.  Gently stir and serve.
